Cheesy Chicken Rice and Broccoli Bake
I have always loved anything that started with cheesy and ended with bake. I felt pulled towards this recipe due to the rice and cheese and of course if there is any veggie that works with cheese, it’s broccoli. So this recipe is cooked all in one pan making it simple to prepare and quick to cook.
This also makes a lot of food and I ended up freezing half of it for later. This worked out well for when the babies are keeping us busy and we just need to warm up dinner quick! This is a perfect postpartum easy to make meal that we will make this again and again.
Cheesy Chicken Rice and Broccoli Bake
(All ingredients are organic when possible)
Ingredients:
1 tbsp extra virgin olive oil
1 small onion chopped
8-12oz chicken chopped (depending on protein needs)
1 tbsp minced garlic in olive oil
3/4 cup sprouted rice uncooked
1 10oz can of cream of chicken soup
3 cups chicken broth
2 cups frozen chopped broccoli
1 cup cheddar cheese
Pinch of salt and pepper
Instructions:
- Heat the olive oil in a large skillet and add in the chopped chicken and onion. Brown the chicken over medium heat and season with salt and pepper. Add in garlic and stir for 30 seconds until it becomes aromatic.
- Stir in rice, cream of chicken soup and the chicken broth into the skillet. Add the first 2 cups of broth in and then add more if needed as rice cooks fully in about 15 minutes.
- Add in the frozen broccoli and 1/2 of the cheese and cook for 2 more minutes. Once broccoli is soft, sprinkle the remaining cheese over top of the skillet and place the skillet under a broiler for 2 minutes if you desire to brown the cheese.
- Serve and enjoy!
