Coleslaw Salad with Dark Meat Turkey and Healthy Dressing
Coleslaw is something that I find hard to make super healthy because all the traditional recipes call for a boatload of mayo. One great option I found was the paleo mayo made with just avocado oil and I just love it. The other option I found was to go with a less traditional slaw that doesn’t have the mayo in it.
This actually only three ingredients.
Ingredients:

Shredded cabbage (I love the bags with some carrots in there and pre-shredded)

Dill sauerkraut

Shredded dark turkey (or any other protein you like)
Instructions:

Shred 1/2 cup pre-roasted dark meat turkey and warm in a small sauce pan. You can also have it cold if you don’t like a warm protein on your salad.

Take 2 tbsp dill sauerkraut and mix with 2 cups of the shredded cabbage. Mix throughly.

Top salad mix with dark meat turkey.

Optional: if you need a dressing for your salad you can take 1/2 tbsp olive oil and 1/2 tbsp red rice vinegar and massage into your cabbage mix.
This salad has a lot of “zing.” If you will. The cabbage is hearty and filling and the dill kraut and vinegar will really give it a sour kick. I love this salad and it can be made in just a few minutes. Easy and delicious always wins on a short lunch break.
